Carrot Cake

Decided to make carrot cake today, this recipe i've been using for the last 23yrs
225g Butter,
50g Caster Sugar,
4 Eggs,
175g Self-raising Wholemeal Flour,
125g Plain flour,
2x5ml spoon Cinnamon,
1x5ml Bicarbonate of soda,
3 large carrots, peeled & grated.

Preheat oven to Gas No4 ,180 degC, 350 deg F.

Mix butter & caster sugar in a bowl, then add the eggs.  Add the rest of the ingredients & mix well.
Grease & line the bottom of an 8inch cake tin,

Put the mixer into the lined cake tin & smooth over the top. Place in the centre of the oven for 50-60 mins.

When the cake is cooked leave to cool a little before turnning out onto a wire rack to cool.
